Pickled Red Onions

I've been seeing pickled veg all over cafe menus for a while now so I'm a bit late to the pickled party! I thought it was definitely time to try this simple version. Perfect for salads, pizza, cheese platters and Bahn Mi, of course!

Ingredients

Method

  1. Peel and thinly slice the red onions.
  2. On a stove top and in a saucepan add vinegar, water, sugar and salt.
  3. Bring to a medium heat and stir until sugar dissolves approx. 1 minute.
  4. Let cool completely.
  5. Add sliced onions to a clean glass jar with a lid.
  6. Push down the onions and fill the jar completely.
  7. Add cooled liquid to jar with onions.
  8. Put on lid and place in fridge for 2 hours or preferably overnight.
